Oven-baked salmon fillets with a medley of roasted Mediterranean vegetables — simple, elegant and healthy.

Preheat oven to 200°C / 180°C fan.
Chop courgette, red pepper and red onion into chunks.
Toss vegetables with 2 tbsp olive oil, salt and pepper on a baking tray.
Roast vegetables for 10 minutes.
Place salmon fillets on top of the vegetables.
Drizzle salmon with remaining olive oil and lemon juice.
Return to oven and bake for 12-15 minutes until salmon is cooked through.
Serve garnished with fresh dill and lemon wedges.
